Semidana

Semidana is a cultivar found throughout Sardinia and with a particular spread in the central area.
It was selected by Accademia Olearia among its productions to be one of the protagonists of the project to enhance the typical cultivars of Sardinia. The Semidana is a monocultivar that expresses an Extra Virgin olive oil with light bitter tones, a hint of golden apple, almond and a large spicy imprint, which then remains on the palate with a pleasantly persistent note.
HOW IT IS PRODUCED
The olives are harvested using semi-mechanical methods so not to damage the trees and allow the olives to be picked at their right stage of ripeness.
The olives are hand-picked and selected in the countryside and taken to the milling plant during the day and no later than 10/12 hours after harvesting.
The milling takes place with a specific cold process that preserves the organoleptic qualities of the olives and enhances their flavour.
The Cultivar
Our Monocultivar Semidana extra virgin olive oil comes from the milling of the Semidana cultivar, a very rustic variety typical of Oristano.
Excellent for both oil and “sugared almonds”, it gives a fruity, slightly bitter and spicy oil. And despite being late, it is very productive and therefore suitable for intensive olive groves. The Semidana are quite vigorous olive trees, which resist well to the oil fly and the peacock’s eye. They have evenly distributed foliage and pointed, lanceolate leaves. The semi-dane olives are ovoid and as they mature they take on an amaranth color with very evident white spots. They are medium to small, weighing between 2.5 and 3.5 grams. It is a medium intensity product whose notes allow a very varied use. In addition to use raw, the combination with potato flans or boiled vegetables is among those recommended.
