THE OIL MILL
After being harvested from the groves, the olives are processed in the Accademia Olearia’s modern production plant, which covers an area of approximately 4,000 square meters. The processing is always done within 24 hours of picking to ensure the integrity and extraction capacity of the olives.
Over the years, the company has consistently invested in innovative production processes, and today it can proudly boast one of the most modern oil mill plants in Sardinia. The facility is equipped with state-of-the-art extraction technology, which preserves the properties of the raw material to obtain a top-quality organoleptic product.
